Ingredients
- 6 large apples (Honeycrisp, Granny Smith, Braeburn, Jonagold or Pink Lady all work well)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon salt
- 1/4 cup flour
- 2/3 cup sugar
- 2 tablespoons vegan butter or coconut oil (optional, but adds richness)
- 2 pie crusts
Instructions
- Preheat the oven to 425°F.
- Line a 9-inch pie pan with one crust and set aside.
- Peel and slice apples. Add to a large bowl, then add remaining ingredients and mix well.
- Transfer apple mixture to the pie crust in the pan. The filling will tower over the top.
- Place the second pie crust on top and crimp the edges of the two crusts together with your fingers or a fork.
- Cut a few slits in the top to allow steam to vent.
- Use foil to cover the outer rim to prevent the edges from burning.
- Bake 40 minutes, until the pie is lightly browned and the filling is hot and bubbly. Let cool before serving.
