Apple Pie

Ingredients

  • 6 large apples (Honeycrisp, Granny Smith, Braeburn, Jonagold or Pink Lady all work well)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1/4 cup flour
  • 2/3 cup sugar
  • 2 tablespoons vegan butter or coconut oil (optional, but adds richness)
  • 2 pie crusts

Instructions

  1. Preheat the oven to 425°F.
  2. Line a 9-inch pie pan with one crust and set aside.
  3. Peel and slice apples. Add to a large bowl, then add remaining ingredients and mix well.
  4. Transfer apple mixture to the pie crust in the pan. The filling will tower over the top.
  5. Place the second pie crust on top and crimp the edges of the two crusts together with your fingers or a fork.
  6. Cut a few slits in the top to allow steam to vent.
  7. Use foil to cover the outer rim to prevent the edges from burning.
  8. Bake 40 minutes, until the pie is lightly browned and the filling is hot and bubbly. Let cool before serving.
